is EVERYTHING vegan?
Yes, Carina's Bakery sells 100% vegan products, containing no eggs, diary, honey.
What does vegan mean?
Vegan means free of any animal products- that includes meat, fish, seafood, milk, butter, eggs, and honey.
Are your products 100% gluten free?
No, as of June 2026, only about 90% of our products are gluten free as we what to insure the quality is there before we release a new product or dive into being all gluten free.
Are your gluten free products celiac friendly?
All items are made in one kitchen (our footprint is pretty small so we have ot work with what we've got but we make our wheat-based doughs at the same time and clena up thoroughly afterwards so we are minimizing contact. We have many gluten free customers. Check back soon, we are deciding whether to go 100% gf.
Do you make sugar free or diabetic friendly items?
We don't make any (sweet items) that are 100% sugar free, nor do we claim to know what makes a good choice for a diabetic. We have trie making items with monk fruit or stevia way back in oru early years, but they were not something Carina could get behind. instead, if you would like to palce a special order, we can make a few select items taht are sweetened with dates, maple, agave, or count sugar, for an added cost.
Do you make Keto items?
No, again it's too hard to bake with alternative sugar and high protein while also being vegan and seeking to make things that are crave-able. Teh closest item would be our Moby's kisses, which are made with can sugar, almond flour, cava, almond butter, vegan margarine, and xanthan gum; topped with dark chocolate.
Do you use seed oils?
Unfortunately, yes, in many products. It is a lto harder than you think to source affordable wholesale vegan butter substitutes that work in our recipes, are not our priced compared to what we cna charge, and don;t also contain too many other allergens. iN fact, right now it's downright impossible. We do have a few items (such as the toscakakor) that are made only with olive oil.
What is Scandinavian cuisine?
Scandinavian food highlights the small joys in nature, the seasonality of food, and the way that spices imported from far way places and introduced by the Vikings can wake up the most rudimentary of dishes. For savory items, this means open faced sandwiches that look as artistic as thye are flavorful. For sweets, it means fluffy sweet breads, buttery cookies or ones heavily spiced, and creamy or margin-topped desserts highlighting the flavor of the season.
Are all of your items Scandinavian?
No, we do work a bit of American items in as well, sch as our cupcakes (some trend more Swedish tahan others) or Girl-Scout-inspired cookies. Burt new items are usually Swedish or Scandinavian in nature
Do you make Swedish princess cakes?
while we have offered these in the past, we are not making full size princess cakes right now due to the amount of talent it takes to get that smooth marzipan occurring. However, you cna usually find either a princess cupcake or a princess cake roll ins tock, which is just as stunning nad delicious, with al the same components.
Do you make kransekakae?
No, we have tried making the Norwegian wedding cake in the past, but after a successful first tyr, it was too much of a failure.
Do you make danishes?
Upon fruits or special holidays, yes. WE cna also make them by special order.
Do you make bread?
Yes, we offer a variety of nearly 10 different breads, both Scandinavian and more American can in nature, and most of those are also gluten free. The breads are hearty, full of flavor and moisture, and mostly made with local florus from Camas Country Mill.
Are all of your products local?
Unfortunately, no. We wish we could get sugar margarine, and some other products local, but want ot also make sure our treats are crave-able and also as healthy as possible. WE source many of our products form earthly Gourmet, an all vegan company highlighting products form the Northwest- including maple syrup, fruit-sweetened raspberry jam, and ore! WE also source fruit from Pacific Coast Fresh as it comes into season, changing products hyper seasonally.
Are your products organic?
No. We focus more on the quality and locality of our products rather than on organic ,which often increases teh price point while leaving those producers who cannot afford the organic certification b ut have good practices out of luck. Our sugar is organic, however, which also help to insure we are always sourcing vegan sugar.
Do all of your employees have a disability?
No, but mostly! We are a disability owned company and at any given time, about 75% of our staff has a disability, bur we do need some staff who have a lot of experience in different jobs and training, which is unfortunately
usually mutually exclusive. plus, we need a balance of skills and oversight to insure our employees are are at all times and following sanitary protocol so that everything we serve is safe as well.
How can I help out? Do you take volunteers or donations?
For 9 years, carina has rerun this business as a for-profit in seeking to integrate specially abled people with the rest of society as equals and prosperous. However, givne the increasingly difficult times and the big dreams she has for the company, we may soon change that. For now, we cannot accept direct donations, but appreciate you leaving yes a tip or using our "treat it Forward" p to add a bit extra to the offers that cna help decreased food waste and put it in the hands of people that need it. Fro now, we are aso full up on employees nad volunteers, but fele fre ot check back!
