Pistachio Cake (snack cake) (vegan, gf, soy free)
I know, you're thinking "pistachios aren't exactly Swedish!" and that's true, but they are one of my favorite nuts and when I wanted to build on the success of our almond cakes, I turned to them for their buttery consistency and slightly bitter, caramel notes that come out when baked into these moist cakes. They're not quite a sponge cake, not quite a pound cake, but they're pure heaven. Topped with an orange blossom glaze to add a bit of tang, freshness and balance... yum! Vegan, soy-free, gluten free.

Ingredients: almond milk, Earth Balance Soy Free margarine, flaxseed meal, nut and citrus extracts, organic cane sugar, pistachios, potato starch, powdered sugar (from beets & cornstarch), rice flour, salt, tapioca starch, xanthan gum
